1. Cut the pineapple in half, separate the pineapple flesh from the bark and cut it into small cubes.
2. Mix the mascarpone with honey, rum and 2 tablespoons of coconut flour. Add the sliced pineapple and fill each half of the pineapple with the cream you prepared.
3. Sprinkle the rest of the coconut flour over the pineapple.
