Here’s a really quick recipe for a spicy cold salad, that can be done in 10 minutes.
Ingredients for 4 people:
8 boiled eggs
1/2 jar of asparagus
1 small leek
1 sachet of mayonnaise
1 small can of pineapple compote
1 tablespoon curry
a few leaves of lettuce and radicchio
olive oil, salt, pepper
In a bowl, add mayonnaise, curry, salt, pepper and juice of pineapple compote. We mix altogether well and set aside. On a serving plate we put together in rows washed lettuce leaves, and then we arrange on top eggs, fresh leek sliced into rings, asparagus stalks and diced pineapple. For salad dressing we use a little olive oil, season it to taste with salt and pour all together with the curry sauce.
