Dried pineapple is a delicious and healthy snack. It comes in chunks, sliced rings and diced.

Sliced rings can be natural and organic. Natural sliced rings are just like the traditional dried pineapple just with no added sugar and no sulfur dioxide while organic sliced rings are grown pesticide and chemical free. Chunks are just like the dried pineapple rings only cut into smaller chunks. They are perfect for snacking and eating out of hand, used in a trail mix, in some Asian or pork dishes, added to leafy salads or for baking. Diced pineapple is diced into smaller pieces and is perfect for your morning cereal or for baking. Whole dried pineapples are used for centerpieces, large festive wreathes, and mantlepiece decorations. Freeze-dried slices will be more like fruit leather, and chewier, browner and drier. Diced chunks of pineapple can also be found dipped in chocolate.

 

Dried pineapple is often treated with sulfur dioxide as a color fixative to help them retain appealing yellow color because without it dried pineapple would turn very brown.

Sometimes it is sold coated with sugar, to make a chewy, sweet snack with a bit of sourness that you can eat out of hand. If no sugar is added pineapples may be more sour. It is not sticky.

You can dry your own pineapple at home from a fresh pineapple. Wash the fruit and cut it into thin slices. Lay it on a parchment covered cooking sheet making sure that fruit slices do not touch each other and then place the tray of fruit in the oven. Turn the oven on very low setting (150-200 degrees F / 50 degrees C) because we only want to dry the fruit, not to cook it. The drying process will take several hours so do not try to increase the heat to speed up the drying process. Remove from the oven when fruit is sufficiently dehydrated. Fruit should be chewy, not crunchy or squishy. Other method is to put the slices of pineapple in a dehydrator on medium setting for 24 to 36 hours.
